Delicious Asian Prawn Spaghetti

It is 2 AM here in Singapore and I am doing online grocery shopping while uploading the video for this Delicious Asian Prawn Spaghetti. My over-zealous inner food blogger self loves to put fancy ingredients into my cart with the intention to cook and blog about that particular ingredient. A lot of times it is unnecessary, but what can I do when it is so attractive? I mean, there is this purple cauliflower that I am eyeing however it costs a staggering 12 bucks!! Now the grown up me understands why parents used to say “If only money grows on trees.” Well, I don’t mind having a purple cauliflower tree growing in my garden. Those people who know me might say “You don’t have a garden, Maya.” Hello? I do not need such negativity in January. I have little plants along my corridor and that is my mini garden. Period.

Anyhoo, I hope it doesn’t sound like I’m bragging, but you guys know that Asian food has the most flavor? I mean why would dishes like butter chicken, tom yam and Rendang get so big in many parts of the world? We are blessed with a million spices and herbs that we use.

Delicious Asian Prawn Spaghetti

Besides different types of spices, the staples in my shopping cart always include cheese, prawns, and some kind of pasta, and today’s recipe just needed these few ingredients. No tomatoes, no cream, we are taking a different route today. A destination that takes only 30 minutes and you are rewarded with an oh-its-a-so-damn-good-plate-of-pasta. Full of Asian flavors, guaranteed to stimulate your taste buds.

Asian Prawn Pasta

Ingredients
  • 200g spaghetti
  • 1 tbsp vegetable oil
  • 400g peeled and deveined prawns
  • 4 garlic cloves, chopped/grated
  • ½ tsp chili flakes
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • To be blended
  • 1 cup sliced spring onion
  • 2 cm ginger, sliced
  • 2 tbsp sesame oil
  • 2-3 green bird’s eye chili (Use 2 regular chili for a less spicy version)
  • Garnishing
  • Spring onion, sliced
  • 1 red chili, sliced
Instructions
  1. Cook the spaghetti n a large pot of boiling salted water until just al dente.
  2. Keep aside 1/2 cup of the pasta cooking water.
  3. In a pan, heat 1 tbsp of oil.
  4. Saute garlic for 20 seconds and add the blended ingredients.
  5. Cook for 2-3 minutes and then add prawns.
  6. Season with salt and chili flakes.
  7. Mix in spaghetti and the pasta water.
  8. Add oyster sauce and soy sauce and cook for a few minutes till the liquid is absorbed.
  9. Garnish with spring onion and red chili
